Sous Vide is a globally popular precision cooking technology that uses constant-temperature circulating water bath + vacuum sealing to heat food evenly at a low and steady temperature. It completely eliminates “overcooked outside, undercooked inside” and dry, tough texture, helping you easily make restaurant-quality tender and juicy dishes at home.
1. Preparations: Required Tools & Food Preparation
1.1 Core Equipment & Container
-
- Sous Vide Cooker: Stick-type circulation heater (household/commercial universal), must support precise temperature control (±0.5°C ideal), 360° water circulation, and dry-boil alarm.
- Water Container: Stainless steel pot, food-grade PP container, or glass tank (depth ≥12cm). Avoid low-quality plastic that may release harmful substances when heated. Capacity must fully submerge food and allow machine installation.
- Auxiliary Tools: Vacuum sealer + food-grade vacuum bags (or zipper bags), paper towels, heat-resistant plastic wrap / aluminum foil, food thermometer (optional for calibration).
- Food Preprocessing (Critical Steps)
1.Thaw & Dry: Thaw frozen food in the refrigerator. Wipe all food completely dry with paper towels to avoid water inside the vacuum bag that affects heat transfer.
2.Seasoning:
-
- Basic: Salt, black pepper, minced garlic, rosemary, thyme and other dry spices (avoid too much liquid sauce, which weakens vacuum sealing).
- Flavor boost: Add 1–2 spoons of olive oil, butter, lemon juice, or herbs; vacuum sealing concentrates flavor.
3.Vacuum Sealing (Core):
-
- Method 1 (Vacuum Sealer): Place food + seasonings in a vacuum bag, leave 2–3cm for sealing. Vacuum until the bag tightly fits the food (no air left), then heat-seal firmly.
- Method 2 (No Sealer): Place food in a zipper bag, slowly submerge in water (keep top above water), use water pressure to remove air, then seal quickly (no water inside).
- Note: Punctured or loose sealing causes water intrusion and poor texture; check seal before cooking.

2. Standard Operating Steps (Universal Version)
Step 1: Install & Secure the Cooker
- Loosen the clamp, insert the heating rod vertically into the container. Ensure the heating part is fully submerged and water level is between MIN and MAX marks.
- Tighten the clamp clockwise to fix the machine stably (no tilting or shaking to prevent dry burning).
Step 2: Add Water & Power On
- Fill the container with room-temperature water (no pre-heating needed). Connect power; the machine enters standby mode.
- Some models support °C / °F switch; set to °C for daily use (machine saves settings).
Step 3: Set Temperature & Time (Core)
- Temperature: Press TEMP and use +/- buttons or dial to adjust (reference: steak 52–60°C, chicken breast 60–65°C, salmon 50–54°C).
- Time: Press TIME to set hours and minutes (regular food: 1–4 hours; thick cuts / tough meat: 6–12 hours).
- Advanced: Smart models support WiFi / Bluetooth APP control — select food type, thickness, doneness; auto-match parameters without manual calculation.
Step 4: Start Heating & Add Food
- Confirm settings and press START; the machine heats up and shows real-time water temperature.
- Important: Wait until water reaches target temperature and stabilizes before adding sealed food (cold water causes uneven heating).
- Ensure food is fully submerged (use weight if floating). Cover surface with plastic wrap to reduce evaporation and heat loss.
Step 5: During Cooking & Finishing
- No monitoring or stirring needed — 360° circulation heats evenly. Low-level alarm reminds you to add warm water if needed.
- When finished: buzzer alerts → press STOP → unplug → use tongs to remove food (avoid burns).
Step 6: Sear for Aroma & Color (Recommended)
Sous vide food is fully cooked and tender but lacks surface crispness; quick high-heat searing is recommended:
- Meat: Heat pan until smoking, add butter / olive oil, sear 30–60 seconds per side for golden Maillard crust.
- Seafood / Vegetables: Torch surface or broil in oven at 220°C for 5 minutes to enhance flavor.
3. Recommended Temperature & Time Chart (Universal Standard)

| Food Type | Thickness/Size | Recommended Temp | Recommended Time | Texture Result |
| Sirloin / Ribeye | 2–3cm | 54–57°C | 1–1.5 hours | Medium–Medium Rare, pink & juicy |
| Fillet Mignon | 2–3cm | 52–55°C | 45–60 mins | Extra tender, melts in mouth |
| Chicken Breast | 200g/pc | 62–65°C | 1.5–2 hours | Tender, juicy, not dry |
| Salmon | 2–3cm fillet | 50–54°C | 20–30 mins | Soft, dense, no fishy taste |
| Pork Loin | 2cm | 63–65°C | 1.5 hours | Tender, no odor |
| Egg | Medium room temp | 63°C | 45–60 mins | Onsen tamago, runny yolk |
| Vegetables (Asparagus/Broccoli) | Whole/cut | 85°C | 15–20 mins | Crisp-tender, nutrient-retained |
4. Safety & Maintenance
4.1 Safety Warnings
Do NOT run dry or below MIN water level — damages heating elements.
Not recommended: Beans, mushrooms, untreated raw meat (low temp cannot destroy toxins, risk of food poisoning).
Uneaten food: Cool immediately in ice bath, refrigerate ≤3 days or freeze ≤1 month. Reheat at (original temp –10°C) for 30 mins.
4.2 Machine Maintenance
After each use: Unplug and cool down. Wipe body with damp cloth (do not submerge entire unit or wash control panel). Clean scale on heater with vinegar + water soak for 10 mins.
Long-term storage: Dry completely, store in dry, ventilated area to avoid circuit damage.
5. FAQ for Beginners
Q: Why is there blood inside after cooking?
A: Insufficient temperature/time or uneven heating. Extend cooking by 10–20 minutes.
Q: What if water enters the vacuum bag?
A: Poor sealing. Safe to eat but texture affected; check seal carefully next time.
Q: Temperature reading is inaccurate?
A: Calibrate with food thermometer. If error >1°C, contact after-sales service.
With these standard steps, your sous vide cooker will become a reliable kitchen tool. Whether for home cooking or commercial catering, you can consistently make tender, juicy, fail-proof precision dishes and unlock the secret of professional gourmet cooking.
